I first had this fantastically easy-to-prepare, healthy, beautiful-to-look-at, and simply yummy dish in Israel last year. Why it took me so long to discover, I don’t know. But now, it is a regular part of my life. Every spoonful is like a taste of summer . . . slightly sweet and tangy.

Here’s what you do: cut up some seedless watermelon into small chunks, and do the same with Greek Feta cheese.  The ratio should be two parts watermelon to one part feta, otherwise the feta could overwhelm the watermelon.

Next, add some fresh mint leaves, slightly chopped (not tiny). Mix everything together.  Some add a dressing of balsamic vinegar, or onions. I don’t recommend either. Keep it simple, and let these three ingredients blend together. It keeps well, so save some for tomorrow . . . if you can.
